I haven't yet completely cut eggs and dairy out of my diet but I'm working on it. Living in Seattle makes it easy — there are restaurants here that make the vegan lifestyle downright appealing. This week, while working at UW, the RE Store field crew hit three of the best vegan restaurants for lunch three days in a row: Monday, Hillside Quickies, 4106 Brooklyn Ave NE (pizza pockets!); Tuesday, Araya's Vegan Thai, 1121 NE 45th St (new address!); Wednesday, The Wayward Cafe, 901 NE 55th St (seitan gyro!). It's unusual for people in the building trades to embrace vegan and vegetarian diets, but if you're serious about environmental conservation, you can't eat meat.
